Easter story cookies

To be made the evening before Easter

things you need:

1 cup whole pecans
1 teaspoon vinegar
3 egg white
pinch of salt
1 cup of sugar
zip lock bag
wooden spoon
Bible

Preheat oven too 300       This is important-don't wait till your half way done with the recipe

place your pecans in zip lock bag and let the kids beat them with a wooden spoon into small pieces. Explain how Jesus was arrested and beaten by the Roman soldiers. Read John 19:1-3

Let your kids smell the vinegar. Put 1 tsp vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross he was given vinegar to drink. Read John 19:28-30

add egg whites to the vinegar. Eggs represent life. Explain Jesus gave his life to give us life. Read John 10:10-11

Sprinkle a little salt in each lids hand. let them taste it and put the rest into the bowl. Explain that this represents the salty tears shed by Jesus' followers, and the bitterness of our own sin. Read Luke 23:27

So far the ingredients are not very tasty. Add 1 cup of sugar. Explain that the sweetest part of the story is that Jesus died because he loves us so much. He wants us to know and belong to him. Read Psalm 34:8 and John 3:16

Beat with a mixer on high speed for 12 to 15 minutes until soft peaks are formed. Explain the color white represents the purity in God's eyes of those who sins have been cleansed by Jesus. Read Isaiah 1:18 and John 3:1-3

Fold in broken nuts, drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus'  body was laid to rest. Read Matthew 27:57-60

Put the cookies sheets in the oven close the oven door and turn the oven OFF.

Give each child a piece of tape and explain that Jesus, tomb was sealed. Read Mathew 27:65-66

GO TO BED. Explain the may be sad to leave the cookies in the oven all night. Jesus' followers were very sad when the tomb was sealed. Read John 16:20 and 22

On Easter morning open the oven and give everyone a cookie. Notice the cracked surfaces and take a bite. The cookies are hollow! On the first Easter, Jesus' followers were amazed to find the tomb empty. Read Matthew 28: 1-9

meatloaf Monday

Well here it is Monday again and tonight was meatloaf Monday.

   So about a pound of hamburger or more if your feeding a lot. 1 large onion, salt, pepper, parsley, basil, an egg, Worcestershire sauce, Parmesan cheese, extra sharp cheddar (for topping) rice 1 boli in a bag), ketchup.

  mix everything together, except the extra sharp cheese, using spices to the amount of your liking. Bake in a 350 degree oven for about an hour. Top with shredded sharp cheddar cheese and bake an additional 10 minutes. we had mashed potatoes and green beans with ours. We also had some dinner rolls thanks to a tip from a friend who got a tip from a friend. For our dinner rolls we used our bread recipe

Anyways we filled the muffin pans half way with the bread dough and cooked it. I did not do a full bread mix recipe for dinner rolls, I made one loaf of bread and used the rest for dinner rolls. After tonight though and watching my kids down them I will make a full bread mix and use it as dinner rolls to have on hand in the freezer for any time use.

Sweet and sour Meatballs

Sweet and sour meatballs with homemade MAC and cheese
First the meatballs:
Make your own or use a frozen pre made meatballs. It doesn't matter just depends on your time and preferred way.
Sauce: 1 jar of grape jelly and 1 jar of chili sauce. Mix together in a pot and add your meatballs. Cook. Over low heat, the longer you cook the more flavor you get.
MAC and cheese: equal amount of flour and butter cooked together. Don't burn this. I then add milk, I can't use heavy cream, it would hurt my husbands tummy. Now u add half a block of shredded cheese to this as well. Seasoning I use salt,pepper,nutmeg and cinnamon. Boil a pound of noodles when ghetto are cooked mix sauce and noodles together. Place in a baking dish cover with a block in a half of shredded cheese.

coffee cake

I am not sure why this is called a coffee cake when there is no coffee in it, although it goes really well with a cup of coffee in the morning.

1/4 cup of oil
2 eggs
1/2 cup milk
1 1/2 cups gluten free flour regular flour for non gluten free

1 1/2 tsp zanthan gum exclude for non gluten free

1 cup sugar, again I used stevia
2 tsp baking powder

In a mixing bowl mix all wet ingredients until well blended then add your dry ingredients and mix together till smooth.
spray a 9 inch pan and put your batter into the pan

1/2 cup brown sugar, I used brown sugar in the raw
2 tbs gluten free flour
2 tsp cinnamon
3 tbs melted butter
In a small bowl mix all the ingredients together to form the streusel topping. Mix until well blended. And top your batter with it. Place in a 375 degree oven and bake for 25 minutes or until a tooth pick inserted comes out clean.

vanilla cookies with nutella

Vanilla crisp

1/2 cup butter
1/2 cup shortening
1 cup sugar
2 tsp vanilla
2 eggs
2 1/2 cups gluten free flour (use regular flour for non gluten free)
1 tsp zantham gum (leave out for non gluten free)

Creme together your butter, shortening and sugar, add your vanilla, and the eggs 1 at a time. Blend in your flour.

Drop by the spoonful on a non greased baking pan. Or roll into a log and cut, flatten with a dusted cup. Bake at 375 degrees for 8 minutes.

The frosting

2 cups of confectionery sugar
2 tbs of butter
2 tbs of milk
1 tsp of vanilla
2 tbs of nuttela (or whatever else you have like melted chocolate)

Taco casserole


Simply, yummy, and the kids loved it. I took a pound of ground meat and 1 onion, cooked together on stove top. I then added Taco seasoning mix and spaghetti sauce, and corn. Mixed well. Placed in a baking dish and topped with cheese. Now for the Taco like topping. Half a cup of pancake mix,2/3 cup milk, 1 egg,2 tap oil. Mix and pore evenly over top. Cook at 350 for 30 minutes.

muffins

This was our breakfast the other morning.

I make my muffins a smaller size so that they are perfect for my kids. I made blueberry and chocolate chip muffins out of the same recipe.








So here is what you need:
a bag of chocolate chips
frozen or fresh blueberries
2 cups of gluten free flour (for non gluten free use 2 cups all purpose flour)
1 tsp of zanthan gum
  1/2 cups of sugar (I had to use diabetic sugar)
  3 tsp of baking powder
  1/2 tsp of salt
  3/4 cup of milk (use lactose if your intolerant)
  1/3 cup of oil
  1 egg beaten

So i always mix all my dry ingredients together and put them off to the side. Then in my mixer I start with the egg, get it beaten up and add the rest of the wet ingredients. After the wet ingredients are mixed well I add the dry to the wet and mix it well. When that is all mixed well I add my chips or blueberries. Now scoop your batter into your sprayed muffin pans.. So here is what you do next:

  3 tbs of sugar
  2 tbs of brown sugar
mix them together and sprinkle on top of your muffins
place your muffins in a 400 degree oven for about 15 mins, but keep an eye on them time depends on your oven.
  Let them cool in the muffin pan a few mins before putting them on a wire rack. Then eat them up, they are so yummy. They also freeze very well for another day or for large batches.

pizza party

We had friends over today and decided to make one of our favorite pizza's. What kid doesn't love pizza and this is a very yummy pizza and you won't miss calling for delivery.

The dough:
2 tbs yeast
11/3 cup rice flour
1 cup tapioca flour/startch
1/4 cup dry milk
4 tsp zantham gum
1 tsp salt
2 tsp unflavored gelatin
1 tsp ital.seasoning 
blend all together in a mixer

1 1/3 cup warm water
1 tsp sugar/honey
2 tsp olive oil
2 tsp cider vinegar

Add to dry and mix for about 3 minutes, until it resembles soft bread dough.
Roll out your dough to fit your pan, place on greased pan. Bake the dough in a 425 degree oven for 15 minutes.

Now while that baking you want to get a small dish, add extra virgin olive oil and freshly chopped or minced garlic, add pepper and parsley and mix it all together. Now when the dough is done baking let it cool a min and then with a basting brush, brush on your olive oil mixture, then add your sauce. I do a thin layer of sauce otherwise my kids have a huge mess and it takes away from the flavor of the olive oil mixture, but do as much or as little or no sauce that you want. Top with cheese, I use mozzarella and sharp cheddar cheese.
 Leave the oven at 425 defgrees and bake for another 20 minutes.

Gumbo, homemade

The best way I can use left overs when I have a variety of meats in the refrigerator. So I had left over, roast chicken, pork roast and pot roast. So go grab your left overs and we will get started.

  I diced up onion,garlic,green pepper and carrots and extra virgin olive oil, placed the in a saute pan over low to medium heat until nicely caramelized. When they are done add them into the bottom of your crock pot, or stock pan on the stove. Next I cut up my left over meats and placed them in the same saute pan and just got them warmed through, added them to the crock pot as well. Make sure you get everything out of your saute pan, scrape the bottom with a spoon, theres a lot of flavor in the bottom of the pan. Okay so next I added a box of beef broth and a jar of homemade spaghetti sauce (use store bought if thats what you have) Stir it all together in the crock pot and add your salt, pepper, parsley, oregano, thyme, basil, soy sauce about 2 tbs and Worcestershire sauce about 2 tbs and a bit of A1 about 2 tbs. Make sure you mix it together well. Put the lid on the crock pot and slow cook on low for 8 hours. This is a meal you want to start early in the morning and let it cook all day. You want to give time to allow for all the flavors to blend and marinate together, the longer it cooks the better it tastes.
  So after the 8 hours is up you want to make your white rice. Make as much as you want, I usually do about 1/2 cup of rice to a bowl of gumbo. After the rice is cooked put it in your bowl then add the gumbo. Garnish with green onion. Now some add shrimp in their gumbo I do not because no one in my house likes fish. I will however add sausage into the gumbo along with the other meats when I have it on hand (meaning my kids did not already eat it all) Sit back and enjoy, no one in your house will think you used left overs to make this and it is a good way to not waste food. If it made to much you can always freeze the rest for another day.

Mashed Potatoe casserole

This is a side dish you don't want to miss. So mashed potatoes any kind, fresh, instant or left over. Place them in the bottom of a casserole dish. Next 1 stick of butter in a sauce pan and sauteed onions. Just till the onions are side. So on top of the mashed potatoes add 1 cup of ricotta cheese. Then the onions, half of the melted butter. Half of block (8 oz) of shredded extra Sharp cheese. Next a later of thinly sliced potatoes, just 1 layer. So now the rest of your butter. And then the other half of your shredded extra Sharon redder cheese. Now crumble bacon in top. This is your last layer. Place in a 350 degree oven for 45 minutes. And serve. It's my favorite mashed potatoe.

Comfort food for dinner

Nothing better then comfort food. Tonight I am trying a new pot roast recipe. So far we have extra virgin olive oil, onions sliced, garlic whole not cut, a mix of A1 sauce, beef broth,salt,pepper, a dash of hot sauce and a touch of balsamic. I will slow cook it the rest of the day. Make sure you check back to see the side dishes. Potatoe casserole with ricotta cheese , Bacon and shredded cheese.

lemon Bars

The crust:
2 cups gluten free flour (reg flour for non gluten free)
2 cups of regular flour for non gluten free
1/2 cup powdered sugar
1 cup butter soft
1/2 tsp zantham gum (omit if non gluten free)

mix until crumbly then add to the bottom of a greased 13 x 9 pan. Bake at 350 for 20 minutes.

The filling:

4 eggs beaten
2 cups of sugar (I used stevia for my hubby)
1/4 cup gluten free flour (use regular flour for non gluten free)
1 tsp baking powder
1/4 cup of lemon juice
1/2 tsp zanthan gum (omit for non gluten free)

mix well, pour over warm crust. Return to oven for an additional 20 to 25 minutes or until golden brown.
Let cool completely before adding the glaze.

Glaze:
1 cup powdered sugar
3 tbs of lemon juice
this way is thick keep adding lemon juice to get the desired consistency

gluten free cheese its

Theses are very good.They smell like and taste like cheese it's, best part they are gluten free. Thanks Ashley for the recipe. ( I will include the link to Ashley's blog so you can find this and other tasty treats)


  So here we go:
2 TBS butter
1 large egg
1/2 TSP salt
1/8 TSP pepper
2 cups sharp cheddar cheese
1/4 cup potato starch
1 TSP zantham gum
salt to sprinkle on top

preheat oven to 400 degrees. Mix butter until creamy, add salt, pepper and egg. Beat until blended. Beat in cheese gradually. Stir in flour and gum. Work the dough into a ball. If it is not sticky enough add 1 TSP of water at a time. Roll the ball to about an inch thick. Now I roll mine right on the cookie sheet with a small roller. Then I take the pizza cutter and cut them into small squares. Sprinkle with salt and bake for about 8 to 10 minutes. Store in an air tight container so they don't go stale on you.

Snack wrap

My kids have been asking for snack wrap, so it was time to figure out a way to make them gluten free.

Tortillas:

1/2 cup gluten free flour(1/2 cup regular flour for non gluten free)
1/2 cup corn meal
1 cup of water
1 egg

Mix it all together to make a thin batter and transfer to a measuring container.

Heat up a non stick frying pan, after pan is hot turn to medium heat.

Pour batter into hot pan and swirl the batter around the pan. Cook on this side til the edges begin to curve up, then flip for the other side. Remove from pan place on a paper towel and cover with another paper towel. Make sure you mix the batter before you pour your next one into the pan. 

 Fill with what ever you would like and enjoy.  
 Now if you want take the snack wrap let it sit for a day, then throw it in the deep fryer and you have home made corn chips

stcky buns

Gluten free sticky buns were a success !!!!

okay here we go
 6 to 7 cups gluten free flour (all purpose for the others)
2tbs zanthan gum
2 tsp salt
2 pkg active dry yeast
1 cup water
1 cup milk
1/2 cup butter
1 egg


Combine 2 cups of flour, zanthan gum, yeast and salt in your mixers, mixing bowl. In a sauce pan heat up milk, water, butter. In a small dish beat your egg. Once milk,water and butter have all melted together add it to our dry ingredients and add your egg. Beat at medium speed for like 4 minutes. Stir in and additional 3 cups of gluten free flour, so while mixing it is pulling off of the side. Next kneed it by hand with another 1 to 2 cups of flours. Place your dough in a bowl, place plastic wrap over it then a cotton towel, let it rise for 45 min to an hour.

After it is done rising take half of your dough and roll it out on a floured surface into a rectangle shape. Okay now use a basting brush if you have one and paint the dough with a light layer of soft butter. Next I mixed 1/2 cup of stevia (you can use sugar) and 2 tbs of Cinnamon, mixed it to gether and dusted it on top of the dough. I used all of it, just make more for the other half of your dough. Bake in a 375 degree oven for 30 mins.  Remove them from the pan as soon as they are done cooking. You will want to drizzle a little something extra on top. So 3/4 cup of powdered sugar, 1 tbs of butter, 2 tbs of milk 1/4 tsp of vanilla mix it real well and drizzle over the sticky buns. Serve warm and enjoy.

fried chicken with homemade honey mustard

Here we go, lets grab our supplies;

mustard, any kind you like
eggs, we use brown
a dash of milk
sea salt
pepper
sweet rice flour or regular rice flour
regular flour for non gluten free
a zip lock bag
boneless, skinless chicken

I will give you more items to grab later for a home made hone mustard sauce for dipping fun

The batter. I used 5 eggs, about 1/4 cup of mustard, salt and pepper to your liking, and a dash of milk. Mix it all together.  So take your chicken and give it a bath in the egg mixture.

So place your sweet rice, or rice flour and put it in your zip lock bag, toss in your dipped chicken pieces. Close the zip lock bag and toss the chicken around until it is well coated. Now off to the sauna of hot oil it goes. Canola or peanut oil are good ones to use for deep frying, healthier as well, but use what you have on hand. Our pieces are small so it took about 10 minutes in the deep fryer. Place the cooked pieces on a plate. Now lets make your dipping sauce.

All right home made honey mustard sauce. Very simple and you probably have everything you need already. So we need 
mayo, for  my husband and I, I did 5 heaping tbs.
mustard, I used 2 different kinds, one was a spicy mustard the other was regular mustard. Jut a few squirts of the spicy and 3 good squirts of the regular.
Honey of course about 1 big tbs
and extra virgin olive oil, just a few drizzles.
salt and pepper to taste.
Mix it up, give it a taste add accordingly.

We had mashed potatoes and corn to go with ours. Plate it all up and our ready for some fantastic fried chicken with home made honey mustard.

Candy cookies

Now this is a winner of a cookie. Who doesn’t love snickers candy and peanut butter cups? We are going to take the candy and hide it in a cookie, so you chose which candy to use, me I do a double batch using both kinds.
1 cup peanut butter
1 cup brown sugar
1 cup sugar
2 eggs
1 tsp vanilla
mix it all together very well
1 tsp xanthan gum
2 cups brown rice flour
1/2 cup potato flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
combine wet and dry ingredients and mix well
It is easier if you chill the dough for like 20 min
Grab your bag of candy and warm up the oven to 375
theres two ways to do this cookie, use which ever is easier for you
now you can wrap the dough around your candy and then place it onto a greased cookie sheet or you can take a muffin pan and scoop the dough into the muffin pan bake your cookie for 9 min and as soon as it comes out of the oven push the candy in the center. We have done both ways and they are both yummy. Make sure you let the cookie cool before removing it from the cookie sheet or the muffin pan. Again these are gluten free so you want to freeze any that wont be eaten with in 2 days

Doughnut Drops

    Gluten Free Doughnut Drops

   This is what we had for breakfast, after playing around with the ingredients we successfully made yummy gluten free homemade doughnuts.

                   Heres what we did:

Get you deep fryer up to 375 degrees

1 1/2 cups gluten free flour (use regular flour for non gluten free)
1 cup sugar (we used stevia for diabetic)
2 tsp baking poweder
1 tsp zanthan gum (take out for non gluten free)
1/4 tsp cinnamon
1/4 tsp nutmeg
 Mix all the dry ingredients together

Next add 1/2 cup of milk
2 tbs oil
1 egg
1/2 tsp vanilla

Drop rounded spoon fulls in your deep fryer, cook about a minute in a half on each side. Place warm doughnuts on a paper towel. We rolled ours into a cinnamon, sugar mixture while they were still hot.
1/2 cup of sugar and 1 tsp of cinnamon.

Eat and enjoy.
 They were actually pretty quick. Prep time was around 5 minutes and cook time was very quick. I can't say how many you will you will get, depends on how big you make the doughnuts

Chicken riggies

This is what the finished product looks like, this meals has some prep work and things you may want to do through out the day. It is a bit time consuming, but so worth it. I bring to you my adaption of chicken riggies, it's a Utica thing.

So here we go. I baked up boneless, skinless chicken breast. With salt, pepper, chili powder, crushed red pepper and a bit of chicken stock in the bottom of the pan. Bake it till its cooked, when it is done place it off to the side and allow it to cool before cubing it up. I had mine in the oven in the morning so I could cube it by lunch time. Okay so cube it in to bite sized pieces. Set it off to the side. Next we want to start chopping our peppers and onions and garlic. I used yellow, red and green peppers. Put all my chopped veggies in to a saute pan with extra virgin olive oil seasoned with salt and pepper. Cook them until soft.
 Okay next step is making our sauce. We are going to begin like making a roue for Mac and Cheese. equal part of olive oil, or butter to flour, we use rice flour. Add your milk (we can't use heavy creme) Salt, pepper, A bit of hot sauce(the hotter you  like the more you add), nutmeg, cinnamon, spaghetti sauce and Italian seasoning, I also add a block of shredded cheese into my sauce. Let it cook till it thickens. Don't forget to get a pot of water going for your noodles (of course we use gluten free.) Once noodles and sauce are all done combine everything together (veggies and chicken, sauce and noodles) and place into a baking dish. Top with more cheese and bake at 350 degrees for 30 to 45 mins. Make a tossed salad and dinner is ready. This has so much flavor in it, it is worth all the different things you had to do to make it come together. It is great for get together's one dish and a side salad and your all set, it is also very filling. Let me know what you think.

Cakes


Poker fondant cake made for my dads 63rd. birthday. My second attempt at a cake like this. We made home made butter cream and fondant. The fondant was hard to work with. It was sticky. I'm hoping to find a better recipe before I share it with all of you.

apples for the crock pot

This is yummy and easy. It doesn't take much time to prepare but because it slow cooks it has a ton of flavor.

so what you will need

3 pounds of cooking apples
1/4 cup sugar
1 tsp vanilla extract

so you want to peel an slice your apples, you want them to be cut to about a 1/4 of an inch thick.
Place your apples in a slow cooker, cook on high for 2 hours or on low for 4 hours with your sugar. After cooking add your vanilla extract and stir. Transfer to a bowl and let chill before placing in the frig. Serving place a scoop of vanilla ice creme or your favorite flavor, top with your slow cooked apples and walnuts.

lemon garlic chicken

Well my kids love this and are always asking me to make it. It really is not that difficult. You may not have all the items you need in the kitchen so make yourself a list as you read down through the recipe.
-I use a roasting chicken but you can use any kind you have
-you need to clean the chicken inside and out..yep that means removing the neck and gizzards.
-after hes been washed pat him dry with a paper towel
-put him off to the side as we get the sauce together for inside the roasting pan.
-you’ll need a pretty good sauce pan or deep skillet, you want enough sauce left to drizzle over the chicken after it is done cooking.
-you need chicken broth or stock at least a box I use two. Dump in in the sauce pan
-take a lemon roll it on the cutting board then cut in half. Holding the cut side up squeeze the juice from both half’s into the pan.
-green onions, fresh parsley and basil, salt and pepper to your taste
-also at least 4 cloves of garlic chopped and put into sauce.
-let everything sit in there and simmer a few mins together before transferring the sauce to the bottom of your roaster
-once the sauce and chicken are in the roaster it is time to give the chicken a massage.
-I rub my chicken down with extra virgin olive oil, cover all parts of skin.
-salt, pepper, basil, oregano, garlic salt and paprika are to be sprinkled on him next
-Take another lemon roll it on the cutting board and cut it in half. With the cut side up squeeze the lemon juice of both half’s on the chicken
-now for the rear of the chicken. Cut a lemon, orange and onion in half and put them in his rear. yep where you would put the stuffing. Also put in a few cloves of garlic
-its ready to go in a 350 degree oven. how long it cooks depends on how big he is.
-usually I do an hour in a half at 350 then i cover him up with foil and slow cook him at 200 to 250 for the remainder of the time in the oven
-I do warn you your house will smell wonderful while he is cooking and it may increase your and your kids appetite for the day.
It takes a bit to get him going but it is so worth it. When i serve this not only to I put sauce over the chicken on the platter I also have a dish of sauce at the table for extra dipping fun.

texas pot roast

I am not sure why I call it Texas pot roast I guess its the sauce. This is good and best when started earlier in the morning and slow cooks all day. It’s time to dig out the crock pot. I love this when I know i have a busy day ahead and won’t feel up for cooking after the days events are done. I also like to use it on a field trip day and I know I will be gone all day, it makes dinner one less thing to worry about. I make everything from scrtach you might not want to and there are alternative ways to make this.
So first we need to make the sauce. In a skillet place a few drizzles of olive oil, chopped onion, garlic and green pepper. Don’t over cook them you want to do it till the are nice and soft but we don’t want them burned. Okay next step in your skillet add a cup of brown sugar, 2 cups of ketchup about a 1/4 of a cup of mustard and a jar of homemade pasta sauce { I keep this in my freezer, I make it out of my tomatoes from my garden} if you dont have home made pasta on hand use a jar of it from the grocery. Now for seasoning, salt, pepper, basil, oregano, parsley and a few twigs of thyme. Mix it all together, you dont have to let it simmer because it is going to simmer all day in the crock pot. So you want to transfer the sauce to the crock pot and then place your choice of meat in the crock pot as well. If your pot is big enough add your potatoes and carrots. This sauce taste so good on the potatoes they really soak it up and give them such a blast of flavor in your mouth. Put the lid on and let it go all day.

I am not sure why I call it Texas pot roast I guess its the sauce. This is good and best when started earlier in the morning and slow cooks all day. It’s time to dig out the crock pot. I love this when I know i have a busy day ahead and won’t feel up for cooking after the days events are done. I also like to use it on a field trip day and I know I will be gone all day, it makes dinner one less thing to worry about. I make everything from scrtach you might not want to and there are alternative ways to make this.

well I have began to play with fondant. I have made two cakes this way. I am hoping to get up the recipes for the fondant and butter creme I used. I also need to get some pics up loaded as well. What say you. Is this something you would like to learn how to do? I must warn you it was frustrating and time consuming so don't let your expectations for the first cake be to high. I am by no means a professional at this yet, with only two attempts under my belt. It was fun and challenging, it made a huge mess, but the end result was worth it. More to come on this very soon.
