Breakfast pizza

Was looking for something different and easy as I wasn't feeling all to great tonight. So we did our first breakfast pizza

I made my bacon and scrambeled eggs like usual

Pizza crust

Do 1 cup hot water
1 tsp sugar
And 1 package of yeast
Combine in a bowl and allow to sit 10 mins

Next we need 2 1/3 cup of flour
Use gluten free flour same measurment and add 1 tsp zantham gum
2 tbs oil oil
Add in wet ingredients and mix

Need into a round ball.
I used a pizza stone and coated it with olive oil and the rolled the dough right onto the pan. Poke several holes in the dough and place in a 450 degree oven. Cook for 20 minuets

Pull out and top with your egg and bacon and shredded sharp cheese.

Bake for an additional 10 minuets

Cool for 5 minuets and then enjoy

Ham and potatoe soup

This was so good and so easy. I had left over ham from the night before so I diced it up. About 3 1/2 cups worth. I also did the same amount in potato. I added this to 3 1/4 cups of water. The drippings from when the ham orginal cooked, but if you don't have the drippings they can be left out. I added to chicken bullion cubes. 1/2 tsp salt
1 tsp pepper
Diced up onion and celery

Then in a sauce pan I did
5 tbs butter
5 tbs flour
use gluten free flour in place of regular flour if you have a wheat allergy
2 cups of milk
Milk allergy its okay use your soy or almond milk

Once this thicked after brought to a boil I added it to ham and potaot pan and simmered for an hour.

I then added, knowing my alergy child wasn't going to eat this {she already requested homemade tomato soup} copper cheese to the pan allowing it to melt .

This was so good. We had homemade dinner rolls with it but another good idea is to add croutons on top of the soup before you serve.

This was a hit and I had no left over soup. Can't wait to make it again

Dinner and desert

Betty crocker gluten free cookie mix. After reading the ingredients i realized they were also dairy free. Score. Halayna cant have dairy either, but a problem it calls for two eggs and yep you guessed it no eggs shes allergic. I decided to go home and play around with it anyways. I have egg re-placer on hand always do butt his seemed dry as mixed and needed something else. So i used half of a apple sauce. Like the ones you pack in your kids lunch. And followed the rest of the directions. Success and they were yummy event the non allergy kids at the birthday party wanted to eat them. Which they were able to have one only because there was nothing else at the party desert wise that Halayna could have. It was quick and easy in a pinch and tasted good, but I like the from scratch better just because I then know everything that goes in it.

On to the main dish. Gluten free dairy free home made mac and cheese.
This one made me nervous, but while at the grocery i found a soy based cheese. Oh my excitement. Halayna loves cheese and ate it daily until we found the dairy allergy. So I had to try making mac and cheese. So instead of soy milk as our base we had to use almond milk. Halayna can not have the soy due to the high vitamin B count and well her body is allergic to vitamin B. So I did the corn starch and dairy free gluten free butter to make the thickining agent (just like you would for the original )  But used almond milk. I added a bit of cinnamon and nutmeg along with my salt and pepper to taste. Its hard to tell you how much to use it depends on you really. Some dont like these strong spices but the worked great with the almond milk, also added a bit of the soy based cheese in the sauce. ( we like it cheesy) . Okay so in the other pot I had my gluten free noodle cooking. After the sauce got thick I did the usual, I grated up the soy based cheese put it on top. I baked at 350 degrees for about 30 minutes just until the cheese melted and served it. It was pretty good. And I am sure it will be made again so miss allergies can still have what she loves when she will eat by mouth.

meatloaf Monday

Well here it is Monday again and tonight was meatloaf Monday.

   So about a pound of hamburger or more if your feeding a lot. 1 large onion, salt, pepper, parsley, basil, an egg, Worcestershire sauce, Parmesan cheese, extra sharp cheddar (for topping) rice 1 boli in a bag), ketchup.

  mix everything together, except the extra sharp cheese, using spices to the amount of your liking. Bake in a 350 degree oven for about an hour. Top with shredded sharp cheddar cheese and bake an additional 10 minutes. we had mashed potatoes and green beans with ours. We also had some dinner rolls thanks to a tip from a friend who got a tip from a friend. For our dinner rolls we used our bread recipe

Anyways we filled the muffin pans half way with the bread dough and cooked it. I did not do a full bread mix recipe for dinner rolls, I made one loaf of bread and used the rest for dinner rolls. After tonight though and watching my kids down them I will make a full bread mix and use it as dinner rolls to have on hand in the freezer for any time use.

Sweet and sour Meatballs

Sweet and sour meatballs with homemade MAC and cheese
First the meatballs:
Make your own or use a frozen pre made meatballs. It doesn't matter just depends on your time and preferred way.
Sauce: 1 jar of grape jelly and 1 jar of chili sauce. Mix together in a pot and add your meatballs. Cook. Over low heat, the longer you cook the more flavor you get.
MAC and cheese: equal amount of flour and butter cooked together. Don't burn this. I then add milk, I can't use heavy cream, it would hurt my husbands tummy. Now u add half a block of shredded cheese to this as well. Seasoning I use salt,pepper,nutmeg and cinnamon. Boil a pound of noodles when ghetto are cooked mix sauce and noodles together. Place in a baking dish cover with a block in a half of shredded cheese.

pizza party

We had friends over today and decided to make one of our favorite pizza's. What kid doesn't love pizza and this is a very yummy pizza and you won't miss calling for delivery.

The dough:
2 tbs yeast
11/3 cup rice flour
1 cup tapioca flour/startch
1/4 cup dry milk
4 tsp zantham gum
1 tsp salt
2 tsp unflavored gelatin
1 tsp ital.seasoning 
blend all together in a mixer

1 1/3 cup warm water
1 tsp sugar/honey
2 tsp olive oil
2 tsp cider vinegar

Add to dry and mix for about 3 minutes, until it resembles soft bread dough.
Roll out your dough to fit your pan, place on greased pan. Bake the dough in a 425 degree oven for 15 minutes.

Now while that baking you want to get a small dish, add extra virgin olive oil and freshly chopped or minced garlic, add pepper and parsley and mix it all together. Now when the dough is done baking let it cool a min and then with a basting brush, brush on your olive oil mixture, then add your sauce. I do a thin layer of sauce otherwise my kids have a huge mess and it takes away from the flavor of the olive oil mixture, but do as much or as little or no sauce that you want. Top with cheese, I use mozzarella and sharp cheddar cheese.
 Leave the oven at 425 defgrees and bake for another 20 minutes.

Gumbo, homemade

The best way I can use left overs when I have a variety of meats in the refrigerator. So I had left over, roast chicken, pork roast and pot roast. So go grab your left overs and we will get started.

  I diced up onion,garlic,green pepper and carrots and extra virgin olive oil, placed the in a saute pan over low to medium heat until nicely caramelized. When they are done add them into the bottom of your crock pot, or stock pan on the stove. Next I cut up my left over meats and placed them in the same saute pan and just got them warmed through, added them to the crock pot as well. Make sure you get everything out of your saute pan, scrape the bottom with a spoon, theres a lot of flavor in the bottom of the pan. Okay so next I added a box of beef broth and a jar of homemade spaghetti sauce (use store bought if thats what you have) Stir it all together in the crock pot and add your salt, pepper, parsley, oregano, thyme, basil, soy sauce about 2 tbs and Worcestershire sauce about 2 tbs and a bit of A1 about 2 tbs. Make sure you mix it together well. Put the lid on the crock pot and slow cook on low for 8 hours. This is a meal you want to start early in the morning and let it cook all day. You want to give time to allow for all the flavors to blend and marinate together, the longer it cooks the better it tastes.
  So after the 8 hours is up you want to make your white rice. Make as much as you want, I usually do about 1/2 cup of rice to a bowl of gumbo. After the rice is cooked put it in your bowl then add the gumbo. Garnish with green onion. Now some add shrimp in their gumbo I do not because no one in my house likes fish. I will however add sausage into the gumbo along with the other meats when I have it on hand (meaning my kids did not already eat it all) Sit back and enjoy, no one in your house will think you used left overs to make this and it is a good way to not waste food. If it made to much you can always freeze the rest for another day.

Snack wrap

My kids have been asking for snack wrap, so it was time to figure out a way to make them gluten free.

Tortillas:

1/2 cup gluten free flour(1/2 cup regular flour for non gluten free)
1/2 cup corn meal
1 cup of water
1 egg

Mix it all together to make a thin batter and transfer to a measuring container.

Heat up a non stick frying pan, after pan is hot turn to medium heat.

Pour batter into hot pan and swirl the batter around the pan. Cook on this side til the edges begin to curve up, then flip for the other side. Remove from pan place on a paper towel and cover with another paper towel. Make sure you mix the batter before you pour your next one into the pan. 

 Fill with what ever you would like and enjoy.  
 Now if you want take the snack wrap let it sit for a day, then throw it in the deep fryer and you have home made corn chips

fried chicken with homemade honey mustard

Here we go, lets grab our supplies;

mustard, any kind you like
eggs, we use brown
a dash of milk
sea salt
pepper
sweet rice flour or regular rice flour
regular flour for non gluten free
a zip lock bag
boneless, skinless chicken

I will give you more items to grab later for a home made hone mustard sauce for dipping fun

The batter. I used 5 eggs, about 1/4 cup of mustard, salt and pepper to your liking, and a dash of milk. Mix it all together.  So take your chicken and give it a bath in the egg mixture.

So place your sweet rice, or rice flour and put it in your zip lock bag, toss in your dipped chicken pieces. Close the zip lock bag and toss the chicken around until it is well coated. Now off to the sauna of hot oil it goes. Canola or peanut oil are good ones to use for deep frying, healthier as well, but use what you have on hand. Our pieces are small so it took about 10 minutes in the deep fryer. Place the cooked pieces on a plate. Now lets make your dipping sauce.

All right home made honey mustard sauce. Very simple and you probably have everything you need already. So we need 
mayo, for  my husband and I, I did 5 heaping tbs.
mustard, I used 2 different kinds, one was a spicy mustard the other was regular mustard. Jut a few squirts of the spicy and 3 good squirts of the regular.
Honey of course about 1 big tbs
and extra virgin olive oil, just a few drizzles.
salt and pepper to taste.
Mix it up, give it a taste add accordingly.

We had mashed potatoes and corn to go with ours. Plate it all up and our ready for some fantastic fried chicken with home made honey mustard.

lemon garlic chicken

Well my kids love this and are always asking me to make it. It really is not that difficult. You may not have all the items you need in the kitchen so make yourself a list as you read down through the recipe.
-I use a roasting chicken but you can use any kind you have
-you need to clean the chicken inside and out..yep that means removing the neck and gizzards.
-after hes been washed pat him dry with a paper towel
-put him off to the side as we get the sauce together for inside the roasting pan.
-you’ll need a pretty good sauce pan or deep skillet, you want enough sauce left to drizzle over the chicken after it is done cooking.
-you need chicken broth or stock at least a box I use two. Dump in in the sauce pan
-take a lemon roll it on the cutting board then cut in half. Holding the cut side up squeeze the juice from both half’s into the pan.
-green onions, fresh parsley and basil, salt and pepper to your taste
-also at least 4 cloves of garlic chopped and put into sauce.
-let everything sit in there and simmer a few mins together before transferring the sauce to the bottom of your roaster
-once the sauce and chicken are in the roaster it is time to give the chicken a massage.
-I rub my chicken down with extra virgin olive oil, cover all parts of skin.
-salt, pepper, basil, oregano, garlic salt and paprika are to be sprinkled on him next
-Take another lemon roll it on the cutting board and cut it in half. With the cut side up squeeze the lemon juice of both half’s on the chicken
-now for the rear of the chicken. Cut a lemon, orange and onion in half and put them in his rear. yep where you would put the stuffing. Also put in a few cloves of garlic
-its ready to go in a 350 degree oven. how long it cooks depends on how big he is.
-usually I do an hour in a half at 350 then i cover him up with foil and slow cook him at 200 to 250 for the remainder of the time in the oven
-I do warn you your house will smell wonderful while he is cooking and it may increase your and your kids appetite for the day.
It takes a bit to get him going but it is so worth it. When i serve this not only to I put sauce over the chicken on the platter I also have a dish of sauce at the table for extra dipping fun.

I am not sure why I call it Texas pot roast I guess its the sauce. This is good and best when started earlier in the morning and slow cooks all day. It’s time to dig out the crock pot. I love this when I know i have a busy day ahead and won’t feel up for cooking after the days events are done. I also like to use it on a field trip day and I know I will be gone all day, it makes dinner one less thing to worry about. I make everything from scrtach you might not want to and there are alternative ways to make this.
So first we need to make the sauce. In a skillet place a few drizzles of olive oil, chopped onion, garlic and green pepper. Don’t over cook them you want to do it till the are nice and soft but we don’t want them burned. Okay next step in your skillet add a cup of brown sugar, 2 cups of ketchup about a 1/4 of a cup of mustard and a jar of homemade pasta sauce { I keep this in my freezer, I make it out of my tomatoes from my garden} if you dont have home made pasta on hand use a jar of it from the grocery. Now for seasoning, salt, pepper, basil, oregano, parsley and a few twigs of thyme. Mix it all together, you dont have to let it simmer because it is going to simmer all day in the crock pot. So you want to transfer the sauce to the crock pot and then place your choice of meat in the crock pot as well. If your pot is big enough add your potatoes and carrots. This sauce taste so good on the potatoes they really soak it up and give them such a blast of flavor in your mouth. Put the lid on and let it go all day.
